Sweetfin Poke – California Rollout
As the general contractor for the Sweetfin Poke California expansion, our team was proud to help bring this high-end, chef-driven poke concept to life across multiple locations statewide.
Each build combined modern coastal design with artisan craftsmanship—highlighted by light wood tones, ocean-inspired tilework, custom millwork, and subtle brass accents that reflect the brand’s refined yet approachable identity. From the intricate geometric wall patterns to the bespoke seating and lighting installations, every detail was executed with precision and care.
Working closely with the design team and ownership, we delivered multiple Sweetfin locations—each one consistent in brand quality and experience, while uniquely adapted to its environment. The result is a series of elevated, contemporary dining spaces that capture the essence of California’s fresh, vibrant, and health-conscious lifestyle.
Schlotzski’s Deli
Williamson General Contracting delivered multiple Schlotzsky’s® locations with the brand’s signature finishes and a clean, polished look—each turned over on schedule and ready for opening day. A standout project was built inside Marine Corps Base Camp Pendleton, where our team navigated base access, training, and inspections while meeting every security and safety protocol. From coordinated trades to meticulous fit-out, we met all requirements without compromising quality—resulting in beautiful restaurants the client was proud to open.
Rocky Mountain Chocolate Factory
We were Rocky Mountain Chocolate Factory’s go-to GC across California—rolling out new boutiques and refreshing existing shops from malls to Main Streets. Our work paired craft with compliance: coordinated health-department approvals, installed NSF cases and enrobers, added make-lines for caramel apples, and tucked powerful exhaust and refrigeration into compact footprints. We standardized finishes (warm maple millwork, brand graphics, pendant lighting) so stores felt instantly familiar, then tailored each to its site with custom shelving, window displays, and queue layouts. Tight mall schedules meant phased, often overnight remodels that kept doors open, upgraded to LED and energy-efficient equipment, and delivered ADA and code updates without slowing sales. Dozens of turnkeys later, the stores run smoother, look sweeter, and the brand shows up consistently—exactly how a chocolate company should.
Robeks Juice
Robeks became my calling card in California. Over the years I built more Robeks stores across the state than any other GC—bright, efficient boxes with the brand’s hummingbird, clean white tile, reclaimed-wood counters, and a makeline tuned for speed. The work turned into a partnership: I ultimately designed, built, and owned the very first Robeks drive-thru. We reimagined the flow for cars and foot traffic, tightened the back-of-house, and kept the fresh, upbeat vibe Robeks is known for. From neighborhood storefronts to that milestone drive-thru, my fingerprints are on the brand’s West Coast footprint.

Menchie’s
We delivered a cheerful, self-serve Menchie’s that’s all about fun and flow. The buildout included the curved yogurt bar with tiled backdrop, a full toppings station, and bright, playful finishes—lime, magenta, and polka-dot walls—to match the brand. Behind the scenes we installed the soft-serve line, refrigeration, and back-of-house prep to health-department specs. Opened on schedule, it’s a sweet little space that churns out smiles (and swirls).
Johnny Rockets
We delivered the downtown LA Johnny Rockets that captures the brand’s classic 1950s diner vibe—stainless counters, red booths, neon glow, and an open grill that puts the sizzle center stage. Our team coordinated tight MEP work and health-department specs in an active urban location, fast-tracking finishes so the space could open with jukebox energy, dancing servers, and hand-spun shakes on day one.
Jersey Mike’s – California Program Partner
WGC has constructed numerous Jersey Mike’s locations across California, delivering consistent results for this fast-growing national sandwich brand. Each store build-out balances speed, quality, and cost efficiency—coordinating permitting, landlord approvals, utility upgrades, and food-grade finishes to meet franchise and health department requirements. Our team understands Jersey Mike’s front-of-house standards, with sequencing that protects the open service line, customer visibility, and durable finishes needed for high-volume daily operations. Jamba Juice Western States
WGC delivered multiple Jamba stores across California—both mall kiosks and in-line cafés—standardizing the brand while adapting to each site’s utilities and landlord criteria. We continue to build ground-up, tenant improvements to existing spaces as well as remodels of existing stores to current reimage requirements. We coordinated night work and inspections to keep centers operating and turned spaces over clean, tested, and ready to pour on opening day.
Häagen-Dazs – California Mall Rollouts
WGC delivered multiple Häagen-Dazs locations across California malls—both kiosks and in-line stores. Our scope spanned selective demo; MEP rough-in; dedicated power and drains for dipping cabinets; dipper-well and triple-sink plumbing; food-safe tile and solid-surface finishes; casework and menu boards; and illuminated signage. We coordinated landlord criteria, health-department approvals, and night-work logistics to keep centers operating. By standardizing details and syncing vendors, we replicated the brand consistently while fitting each footprint’s utilities. Result: clean, bright shops that open on schedule—ready to scoop on day one.
Freshii LA
We built a single Freshii in Los Angeles—an airy, efficient space with a bright line, digital menus, and grab-and-go refrigeration. The clean, modern layout supports Freshii’s wellness concept with fast, customizable bowls, salads, wraps, and smoothies for LA’s on-the-go crowd.
Crumbl – California Program Partner
WGC has successfully built multiple Crumbl locations across California, delivering competitive pricing and excellent results for this fast-growing dessert brand. Our team adapts Crumbl’s open-kitchen, guest-focused design to diverse retail footprints, managing permitting, landlord coordination, MEP upgrades, and food-grade finishes with precision. Cinnabon – Multi-Site Bakery Rollouts (West)

We’ve partnered with SunLife Organics on most of their California build-outs, translating their “Love • Heal • Inspire” ethos into space. Warm woods, surf-culture details, custom millwork, and polished concrete frame high-efficiency juice bars, grab-and-go cases, and retail walls. Each store feels hand-crafted yet runs like a machine—consistent finishes, durable specs, and smart back-of-house flow—so the brand’s unique, healthy concept shines from Malibu to the malls.
Popeye’s Chicken
WGC delivered multiple Popeyes Chicken locations across California, combining fast-track schedules with franchise-quality execution. Our scope spanned ground-up pads and tenant improvements: heavy kitchen MEP with gas and 480V power, Type I hoods with fire suppression, make-up air and RTU upgrades, walk-in cooler/freezer sets, fry lines, CO₂ and soda systems, grease waste and exterior interceptors, and robust electrical/low-voltage for POS and digital menu boards. We finished out dining rooms with durable tile/FRP, millwork and seating packages, branded finishes, and ADA upgrades, coordinating health-department approvals, landlord criteria, and city inspections to open each restaurant clean, tested, and ready to serve.
Cinnabon Swirl – California Rollout
WGC has kicked off the new Cinnabon Swirl program in California, selected as preferred GC thanks to our track record with the brand. We’re delivering fast-track buildouts with signature finishes—bold color palette, curved service counters, and feature graphics—backed by precise kitchen MEP, hood/suppression, and equipment integration. Coordinating night work, inspections, and vendor installs, we’re turning over clean, consistent stores on schedule and ready to swirl, frost, and serve.
